The new `hydro_parameters.h` files prevent out-of-source builds

The inclusion of the new hydro_parameters.h files in each of the schemes prevent out-of-source builds.

@pdraper can we add an out of source build to the jenkins?

Also, I have no idea how to fix this. I thought using relative paths was the right thing?
