Update all the EAGLE parameter files

• Update all the EAGLE parameter files to use the model as calibrated in Josh's paper.
• Update the readme to list the correct set of changes.
• Update the gravity section of the low-z examples.

Fixes #828 (closed).

@dc-rope1 this should solve your original issue #828 (closed) and let you get along with your FLARES-like test.

LGTM, maybe we want to think about packaging a default lossy compression list. But that might be a pain to keep updated.
